Cachaça is a Brazilian spirit distilled from freshly-pressed sugar cane juice. Although many bottles sold in the US refer to it as “Brazilian Rum,” white rums are typically distilled from molasses which is a processed sugar cane product.  Cachaça tends to have a more herbaceous nose which can develop into warm vanilla notes when the spirit is barrel-aged, becoming gold cachaça.
