Campari is an Italian apertif dating back to 1860 made by infusing water and alcohol with fruits and herbs. It is both sweet and intensely bitter with an intense red color, and orangey nose owed in part to the inclusion of small, bitter Italian oranges called chinotto. The other known ingredient is a Caribbean shrub called cascarilla.
