Fino sherry is Spanish fortified wine that starts with white wine made from Palomino grapes which is then fermented in tanks under a layer of yeast called flor. The flor provides a seal that prevents the wine from oxidizing. The finished product is typically 15-16% alcohol by volume, is meant to be served fresh and chilled, and pairs well with food. It is the driest of the sherry family.
