Rhum Agricole is a spirit distilled from fermented fresh sugarcane juice typically produced in the French Caribbean islands, although it is made elsewhere in the Caribbean and in the India Ocean on Réunion Island and Mauritius . When allowed to rest in large tanks before being bottled, it is clear in color, but when aged in oak barrels for a minimum of three years, it takes on a golden hue and is called Rhum Vieux Agricole.
